Bring 2 cups coarse cornmeal (polenta) with 11 cups water to a simmer (whisking frequently) and 1 tablespoon coarse salt.
Place uncovered in a 375 oven for one hour.
Take out and whisk for a minute.
Return to oven and bake another 15 minutes.
Remove and whisk until smooth, a minute or two.
